MBC wants faculty and staff to spend their lunchtime with students. According to Frank Gleason, Aramark's interim director, a student might take out a sandwich with meat or mayonnaise and not refrigerate it. If the sandwich goes bad and the student gets sick, investigating eyes may point the finger at Aramark. Aramark will make exceptions for sick students or unusual circumstances. The food service also offers sack lunches for working students or those with classes during lunch. Students and faculty are allowed to take a tray of food out of the cafeteria to eat outside or to attend a meeting. The rules state that no one is to take food out of the cafeteria, but Aramark does not mind students taking a piece of fruit or dessert as long as students do not abuse this allowance. MBC "worked with Aramark to tap into their expertise" on what foods students want and like, Griffin said. Aramark realizes every campus is unique, Gleason said. Aramark tailors a program like Real Food on Campus to each individual school. Hen Truong, Aramark's full-time director for the MBC campus beginning Feb. 23, said he plans "to put out great food and have great customer service." He aims to please three groups: students, faculty and staff; the administration; and his employer, Aramark. Mr. Truong plans to follow Aramark recipes but said as a chef he can't help but add his own touches. Originally from Vietnam, Mr. Truong specializes in Asian food, but also has been trained at Western Culinary Institute in many other cooking styles, including French and Italian. MBC and Aramark also hope to expand the offerings in the cafe to meet people's wants and needs. Truong will meet with the cafe manager and customers to learn the pricing structure and people's expectations. "I am excited to be here," Mr. Truong said, "and am looking forward to working with the student body."
